A light and tasty recipe that combines the benefits of fish protein with the benefits of chicory: their interesting rate of potassium and vitamins.
For 4 people
- 4 endives special oven Pearl of the North
- 10 g of butter
- 4 tablespoons thick cream
- 4 cod fillets
Preheat oven thermostat 8 (240 ° C).
Slice chicory lengthways to obtain slices. Sauté in butter for 15 minutes over low heat. Add salt and pepper.
Cut out 4 squares of parchment paper to form the wrappers. In each of them, have a bed of chicory, a tablespoon of crème fraiche and a fillet of cod. Add some thyme leaves. Add salt and pepper.
Close the curls and bake for 15 minutes. Serve and enjoy!
