For 2 desserts:
1 sachet of vanilla sugar
60 g dark chocolate
40 cl of orange juice.
Peel the pear and poach for 10 minutes in water with the vanilla sugar Break the chocolate into small pieces. Boil the orange juice and add the chocolate. Mix to obtain a smooth cream and place 5 minutes in the refrigerator. Place the bowl of chocolate in water with ice cubes and whip to rise. Serve with the pear cut into strips.
